Scotch Bonnet Peppers
SCOTCH
BONNET PEPPERS, or Bonnie Peppers as they are called
in Barbados, are the flavourful, key ingredient in Lottie's Barbadian
hot pepper sauces. This pepper is said to have gotten its name from its
shape which is similar to that of an old-fashioned Scottish bonnet.

Like
the Habanero pepper, the Bonnie pepper is a variety of the species
Capsicum Chinense. The two peppers are close cousins and are often
mistakenly thought to be the same pepper. Their shapes are slightly
different and the Habanero when ripe is orange while the Bonnie Pepper
when ripe is red. Also, the Habanero has a slightly fruity flavour while
the Scotch Bonnet is hotter. The redder the pepper is when cooked, the
prettier the sauce becomes.
Barbadians and other Caribbean islanders
